August is the last chapter of summer and this month’s meal plan is built to savour every lingering minute of the season. Designed to serve four, these five recipes celebrate the produce that peaks as the season starts to turn, from tender marrow and sweet red peppers to the first fresh figs of the year.

These recipes have been carefully selected by our editors to reflect the full range of August cooking, from quick, no-fuss weeknight dishes to more unhurried weekend cooking. Most recipes are on the table in under an hour, but if you have more time to spare, the shallot, bacon and parmesan stuffed shells reward the effort handsomely, and serve six, so leftovers are very much part of the plan.

August’s finest take centre stage throughout. Juicy cherry tomatoes lift an elevated ploughman’s salad; sweet roasted red peppers bring warmth and colour to a merguez and giant couscous traybake; tender marrow is transformed in a fragrant stir-fry with curry leaves and coconut; ripe figs pair beautifully with briny roasted chicken legs; and oversized pasta shells are filled with a rich shallot, bacon and parmesan stuffing.
